I'm embarrassed to say that Jiffy has been my cornbread source. lol Please someone bail me out here. Jiffy mix is not something to be proud of. lol

I grind my own popcorn and whole wheat flour and then I use Canadian's Gardener's recipe that she gave to me almost 2 years ago. Its a huge hit at our home. I always double the recipe, because the family loves it so much.

Canadian Gardener's Cornbread

1 1/2 c. cornmeal
1 1/2 c. whole wheat flour
1/2 c. sugar
2 Tbsp. baking powder
1 tsp. salt (I don't use)
2 eggs
2 c. milk
1/3 c. olive oil

Mix first 5 ingredients in a bowl. Add remaining ingredients. Pour into cake pan and bake at 350 until done.

The kids love this with syrup on or just plain. I sometimes will sprinkle cinnamon on top before I put it in the oven. Delicious.

You might want to try cooking it in a cast iron frying pan in your oven. Makes a nice crispy edge to it.

Here's my recipe:

Cornbread
1 1/3 cups cornmeal
2/3 cup flour
1/2 tsp. baking soda
4 tsp. baking powder
1 tsp. salt
2 eggs
1/3 cup oil
1 1/4 cup buttermilk or sour milk
1/2 sugar (optional or adjust to taste)

Mix dry ingredients together, make a well in the middle. Add eggs and beat with a fork. Stir in oil and buttermilk, mix well. Put 1 Tbsp. of oil on the bottom of a cast iron frying pan and put pan in the preheated 425° oven. Let it heat for 5 minutes then pour batter into it, making sure the bottom is covered with oil. Bake 20-25 minutes until the top is lightly golden.

Can't help you here - we use the Jiffy Mix Cornbread. Thanks for the recipes you guys posted. Maybe we could give the Jiffy Mix a rest.

My mom made it from Jiffy too and it's not bad (obviously since I've been using it all these years and grew up on it) lol but I have no idea why I haven't made it from scratch.

I even make jiffy cornbread muffins. AND, do you know I have never even made homemade brownies? :mwhistle:
