Oooo I took a look and I've realized I didn't make near enough jars of peaches and pears, nor applesauce. I only have a few jars left of bread & butter pickles (our familie's favorite) although I do have more jars of relish left. I do have lots of jams/jellies and a number of jars of apple juice.

How about you, whats left from all your hard work of 2003?

I froze more than canned this year and have LOTS of corn and zucchini. I wish I could ship you some of my applesauce, cj! We way overpicked the apples (it was so much fun!) and made (canned) sauce enough for several years it seems. My dks don't like this years blend as well and so they aren't eating it as quickly. I'm trying to come up with ways to disguise it (other than subbing for oil in baking)!

I'm not a canner but I do like to freeze things. This last summer was kind of a wash for me as far as preserving - too much going on to do much of anything. I do still have some goodies in the freezer though!!! I still have blueberries, grape jelly, strawberry and peach jam. Still have roasted red peppers and a few pkgs. of dehydrated tomatoes. I have pumpkin left from the year before - down to 3 pkgs though! :( No applesauce, although that is on my list of things not to miss next year. Out of spaghetti sauce too...darn! Oh well....will just have to plant extra tomatoes in the spring to be sure and have plenty to get through the winter next year!

Sure is nice to have some of those goodies put up....summer doesn't seem so far away when you have blueberries sitting on your countertop (even if the wind chill IS below zero outside!!!) :)

It's going down! We are still eating canned tomatoes from 2002! That was a bumper crop that year. Good thing because last year was terrible. That's a good lesson for me to learn! When you have it - can it! Because the next year you might not have any! I've still got canned corn, wish I had more canned green beans. The dills are all gone. I made a LOT of applesauce last year. I want to turn it into fruit leather. Jam is holding out ok.

I use my canning a lot. Everyday. I hadn't really noticed how much I use until I noticed the empty canning jars on my counter that were washed and not put away. lol
