I grow mint and oregano both and have learned through trial and error that these plants spread quickly and will choke out other plants. it is best if you are able to contain them in an area somehow by either planting them in their own bed or by planting them in a pot and them sinking that pot into your garden with the rim a bit above the ground. They also do well in pots on the deck and come back year after year.
We dry our herbs in our dehydrator and use them year round this way.
