Do you like chicken and dumplings? If so, what kind of dumplings. This was my fav food growing up and it still is. I will only eat the fluffy like clouds dumplings. I do not like the flat type. It's one of those things that my grandmother managed to stick in my head - dumplings should be like clouds. To me it is the ultimate comfort food, even more than potato soup, which I dearly love. I don't even know if the younger cooks make chicken and dumplings. There is probably somebody somewhere that will tell you why it's bad for you but for me, its heaven. Mel has learned to make fabulous chicken and dumplings. He had them along with the butter peas and rice yesterday. It won him tons of brownie points with me.
You can tell it's lunch, all my posts are about food. LOL

I ADORE chicken and dumplings. Best food ever! and I ditto the fluffy cloud idea.

Yummie, now your both making me hungry. I love chicken and dumplings as well. My grandmother use to make the fluffiest dumplings ever.

I will get Mel to tell me how he does it. There is no recipe I'm sure. It's very simple and I will post as soon as I get the details from him. I do know that we have switched from using Bisquik to using the frozen biscuits.

Okay here is Mel's Chicken and Dumplings. Please bear with us as we are country cooks and there is a lot of approximates.
Cook a Stewing hen in a large pot with water until done (can just use chicken pieces)
(Mel says make sure it's dead LOL)
Season to taste
Once chicken is done, remove and sit aside
Add biscuit dough to boiling water. Some people live their chicken in but we take it out.
We use frozen biscuits, either Mary B's or Pillsbury.
How much you add will depend on the pot you are cooking in and how many you want. One biscuit makes 1 dumpling.
Cook at full boil, uncovered, for 5 - 10 mintues. Don't reduce the heat.
Then cover and cook for an additional 5 - 10 minutes at low heat (warmer than simmering).
Check 1 dumpling's inside to see if its done. It should not be doughy but should be similar to a cooked biscuit. If you overcook them they will be gluey/rubbery.

I've only made them using bisquik and just dropping spoonfuls into my chicken soup.
