In effort to increase our fiber, I actually made a whole wheat bread that no one in my house complained about. Mel says it's dessert and Ryan just ate it without complaining - a miracle. I got the recipe from Recipezaar.com and it was easy. Maybe next I will try a bread using yeast.

Whole Wheat Orange Quick Bread

1 1/2 cups whole wheat flour
1 1/2 cups all purpose flour
3/4 cup sugar
1 - 2 tablespoon orange zest (I didn't add this)
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup orange juice
1/2 cup milk
1/2 cup cooking oil
1 egg
1/2 cup nuts (I didn't add this either)

Topping: 1 tablespoon sugar, 1/2 teaspoon cinnamon

1. Combine all ingredients in large bowl.
2. Stir until well moistened.
3. Pour batter into greased loaf pan.
4. Sprinkle with topping.
5. Bake at 350 degrees for 60 - 65 minutes.
6. Try to keep family away from bread until it cools. :chef:

Oh now that looks way too yummy! LOL that is the way food should be. Thanks for sharing a good tried and true.

Oh my, this is one I'm definitely going to try. Looks just too yummie not too!! :yippee:

This looks great - I can see this one going over well for breakfast instead of muffins. Thanks for sharing it with us! :)

Paelthom - If you decide to try making yeast breads and have any questions, let me know. I'm no good at pies from scratch, but I do know how to do yeast breads fairly well and I'd be happy to help. :)

Thanks Farmgirl. I will certainly have questions on the yeast bread. As soon as I get my nerve up to try, I'll let you know.
