Can anyone tell me a simple way to preserve garlic? Before I raised my own, I used to buy it from the store already minced up in little jars. I'm wondering what they put it in and if it's pressure cooked? Someone on another forum told me to be careful about mincing it and then putting it in olive oil & storing in the fridge without processing it - because of botulism??? Now I'm all nervous about doing anything with it (besides eating it fresh) for fear of killing off the family! :icon_eek:
Does anyone have a suggestion for me? Something simple as I'm (unfortunately) not a canner. Ideally, I'd like to mince it up and just store it in the fridge if it will keep for a while that way. I know the commercial jars of garlic keep for a long time - months. But maybe they were processed a special way first and that's why they keep for so long? Any help will be appreciated!!
