We eat oatmeal here a lot. I'd like to try a good baked oatmeal recipe, if anyone has one. I thought it would be a nice thing with the weather being cold now.

I sure won't give you mine. I tried that once in my slow cooker. We could have used the oatmeal for glue. It was just awful!!!

CJ, I tried the oatmeal in the crockpot and thought it was awful too. You have to try the baked oatmeal, though. It's so good! And very filling! The kids will love it, they will think it's dessert.

Baked Oatmeal

Ingredients:
1 cup oil
2 cups sugar
4 eggs
6 cups oatmeal
4 teaspoons baking powder
1 teaspoon salt
2 cups milk

Directions:
Combine all ingredients and pour mixture into ungreased 9x13-inch pan.
Bake for 30 minutes at 350°.

You can add fruit of your choice, about 1 cup.
If you find the center is not cooking too well (it should not jiggle when you move the pan), you can leave it in for longer or next time try a slightly larger pan.

Thanks for the recipe :) One question: are those regular oats or quick cooking? I'm assuming the old fashioned ones but want to make sure.

I always bake my oatmeal in individual little packages, known as cookies

I've never heard of baked oatmeal. How do you eat it? Like a breakfast bar or something?

It won't stay together to be a bar. You spoon it into a bowl, add a little milk if desired. If any of you try it, you'll have to tell me if you liked it or not. :)
