I planned on having a herb garden this year, but somehow it got waylaid again. Next spring, I want to plant one and was wondering which herb you found easiest to grow?

Mint. definitely mint. It just won't die! well at least the mint the previous owners put in the front flower beds.

You need to be careful with the mint though, it will overtake most things.

Chives come up year after year with no special care from me. Nice mild onion taste to flavor just about anything where an onion flavor is wanted.

I've had great luck with genovese sweet basil, parsley, greek basil, dill, and oregano. I had others planted, but the hurricanes wiped them out so I'll see how some different things do this year.

I had forgotten about chives. We love those.

I love dill too. I've froze some when we lived in the city and used it in soups and stews. Dill is one herb though that will also take over your garden if your not careful.

Mint, parsley, garlic chives.... but I really love borage. The blue flowers are so pretty in the garden and edible too. The look very pretty in salads and have a slight cucumber taste. They also look very attractive set in an iceblock for adding to summer drinks. Borage is easy to grow and self-seeds readily. I just transplant them all around to wherever I want them and they always seem to grow (my kind of plant!)

I have had the best luck with chives and dill
